Pesto

Ingredients
3 Cups of basil leaves
1/2 Cup Parsley
3 Cloves of Garlic
1/2 Cup of Pine Nuts or Pecans
1 Cup of Parmesan or Asiago Cheese
1 teaspoon Oregano
1/2 teaspoon black pepper
1/2 to 2/3 Cup Olive oil
Salt to Taste
Instructions

Combine all ingredients in a food processor or blender adding enough oil to make a thick smooth sauce.

Add salt to taste

Toss into hot pasta or serve with fresh garlic bread/ salads.

Makes 2 cups enough for 4 servings of pasta.

Herbal Simple Syrup

Ingredients
1 Cup Sugar
1 Cup Water
Small Bunch of Herbs
(Up to 1/4 cup) Squeeze of Citrus
Instructions

Bring sugar and water to a boil

Add washed herbs and optional citrus.

Simmer for 10 minutes until the sugar is dissolved.

Cool and strain out herbs.

Store and use in beverages.

Sweet Onion Quiche
Difficulty: Easy

Ingredients
9 in Pie Crust
2 Tablespoons Olive Oil
1 1/2 pounds onions, thinly sliced
2 Large Eggs
1 Cup Heavy Cream
1/4 Teaspoon Nutmeg
Salt & Pepper to taste
Pinch of Paprika
Instructions

Preheat oven to 325° F

Heat oil in suacepan. Stir in onions and saute over medium heat until onions are caramelized (20 min). Remove and set aside.

Whisk together cream, eggs, spices in a bowl.

To assemble, spread onions over pie crust. Pour over egg mixture. Sprinkle with paprika.

Bake for 35-40 min, or until top is golden.

Kale Chips

Ingredients
1 bunch of kale
1 Tablespoon olive oil
salt to taste
Instructions

Preheat an oven 350 degrees F. Line a non insulated cookie sheet with parchment paper.

With a knife or kitchen shears, carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with salt.

Bake until edges are brown,
