Pesto

Difficulty: Easy

Pesto

Ingredients

3 Cups of basil leaves

1/2 Cup Parsley

3 Cloves of Garlic

1/2 Cup of Pine Nuts or Pecans

1 Cup of Parmesan or Asiago Cheese

1 teaspoon Oregano

1/2 teaspoon black pepper

1/2 to 2/3 Cup Olive oil

Salt to Taste 

Instructions

  1. Combine all ingredients in a food processor or blender adding enough oil to make a thick smooth sauce.

  2. Add salt to taste

  3. Toss into hot pasta or serve with fresh garlic bread/ salads.

  4. Makes 2 cups enough for 4 servings of pasta.

Over 15 grams of Protein and Daily recommended intake of Iron.

Herbal Simple Syrup

Difficulty: Easy

Simple Syrup

Ingredients

1 Cup Sugar

1 Cup Water

Small Bunch of Herbs

(Up to 1/4 cup) Squeeze of Citrus

Instructions

  1. Bring sugar and water to a boil

  2. Add washed herbs and optional citrus.

  3. Simmer for 10 minutes until the sugar is dissolved.

  4. Cool and strain out herbs.

  5. Store and use in beverages.

Nutrition

Can be used for Basil Lemonades, Coffee Syrups, and Spritzers

Sweet Onion Quiche

Difficulty: Easy

4 Servings

Quiche

Ingredients

9 in Pie Crust

2 Tablespoons Olive Oil

1 1/2 pounds onions, thinly sliced

2 Large Eggs

1 Cup Heavy Cream

1/4 Teaspoon Nutmeg

Salt & Pepper to taste

Pinch of Paprika

Instructions

  1. Preheat oven to 325° F

  2. Heat oil in suacepan. Stir in onions and saute over medium heat until onions are caramelized (20 min). Remove and set aside.

  3. Whisk together cream, eggs, spices in a bowl.

  4. To assemble, spread onions over pie crust. Pour over egg mixture. Sprinkle with paprika.

  5. Bake for 35-40 min, or until top is golden.

Kale Chips

Difficulty: Easy

20 Minutes

Baked Kale Chips

Ingredients

1 bunch of kale

1 Tablespoon olive oil

salt to taste

Instructions

  1. Preheat an oven 350 degrees F. Line a non insulated cookie sheet with parchment paper.

  2. With a knife or kitchen shears, carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with salt.

  3. Bake until edges are brown,

  4. 10-15 minutes, tossing once.
